The name of the fruit is the most visible part of a concentrate, but it is not the most important purchasing specification. Two cherry concentrates can behave differently in the same beer because their extract, acidity, aroma profile and processing characteristics are not identical. A disciplined selection process protects both the sensory idea and the production line. The right questions should be asked before the first commercial tank is filled.
Start with technical data, not the flavour name
A technical data sheet should be read as a map of how the ingredient may behave. Brix describes the concentration of soluble solids and helps calculate the contribution to extract, while pH and titratable acidity reveal different aspects of sourness and process conditions. Microbiological parameters, allergen information, composition and storage requirements belong in the same review. The brewery should also ask whether aromatic fractions are retained, whether preservatives or colourings are present and whether the concentrate contains pectin.
When selecting a fruit juice concentrate for beer, the buyer should request a sample that represents the commercial product and test it against the intended specification. The most useful comparison is rarely based on aroma alone. A concentrate may smell attractive in the container but become flat beside hops, overly sharp after carbonation or too sweet in a beer with residual extract. Technical values narrow the field; trials in the actual base beer reveal which candidate can deliver the intended result.
Acidity variants can be particularly valuable. Instead of increasing dosage only to obtain more brightness, a brewer may choose a version whose acid balance fits the recipe, preserving fruit aroma without adding unnecessary sugar or extract. This is useful when the same fruit is considered for very different styles. A cherry concentrate intended for a dark porter may need a rounder profile than one designed for a dry sour, even if both products carry the same fruit name on the development sheet.
Test the concentrate inside the actual beer matrix
Bench trials should be small, controlled and carefully recorded. Prepare a reference sample without fruit and several samples with increasing dosages, then assess aroma, flavour, acidity, colour, body and finish. The panel should return to the samples after carbonation or a short conditioning period rather than deciding from the first tasting alone. Fruit aroma can integrate, fade or become more pronounced as carbon dioxide, alcohol and hop compounds change perception. Recording exact weights and volumes makes the preferred result reproducible.
The point of addition must also be tested. Adding concentrate before fermentation can produce a drier, more integrated profile, although active fermentation may strip volatile aroma. Adding it later can preserve freshness but requires a clear plan for fermentable sugars, microbial stability and package pressure. The correct choice depends on the beer, yeast, equipment and stabilisation method. A supplier can advise on the ingredient, but the brewery remains responsible for validating its own process and shelf life.
Processing behaviour belongs in the trial report. Pectin-free concentrate is easier to filter and less likely to generate heavy sediment or clog equipment than fibrous fruit materials. The production team should still observe pumpability, mixing, tank residue, filtration performance and cleaning time during a pilot batch. An ingredient that produces an excellent tasting-room sample but creates unacceptable losses or downtime may not be the right choice for a permanent product.

Once the recipe is approved, the concentrate should become a controlled raw material rather than an informal flavour addition. The brewery’s specification can include the accepted Brix and pH range, sensory reference, ingredient declaration, microbiological limits, packaging format, storage temperature and shelf life. Incoming checks do not need to recreate the entire development project, but they should confirm that each delivery matches the parameters on which the recipe was built.
Supplier reliability matters alongside flavour. Lead time, minimum order quantity, batch documentation and the availability of a technically comparable replacement can affect whether the beer stays in production. Smaller breweries should avoid tying up cash in more stock than they can use safely, while larger plants need confidence that volume can scale without changing the concentrate’s profile. A clear purchase specification and retained reference sample make future conversations with the supplier faster and more objective.
Sensory review should continue after launch. Comparing packaged beer from successive batches can reveal gradual drift in the base beer, dosage or process before consumers notice it. When technical data, pilot results and sensory standards are kept together, the brewery gains a repeatable platform for future variants. New fruits and acidity levels can then be explored against a known method, allowing innovation to move quickly without turning quality control into an afterthought.
